Breakfast Buddha Bowl

  • ½ pound Ground Sage Sausage
  • ½ pound thick cut bacon
  • 1 yellow bell pepper, julienned
  • 1 cup mushrooms
  • 2 cups Perfect Roasted Sweet Potatoes (link in post)
  • 2 eggs, fried
  • Salt and pepper to taste
  • Toppings: avocado and green onion
  1. Add ground sage sausage to a large skillet on high heat. Use a spatula to break up the meat as it browns. Cook down into crumbles, 5-6 minutes. Drain additional fat and set cooked sausage aside.
  2. Place bacon on a non stick, ungreased baking sheet evenly spread out. Preheat your oven to 350 and add your bacon into the cold oven. Cook bacon 15-20 minutes until slightly crispy. Remove bacon and set onto a paper towel to absorb some of the additional grease. When cooled, chop and set aside.
  3. Add bell peppers and mushrooms to the same skillet you cooked the sausage in, no need to wash. Season with salt and pepper to taste and brown side by side or mix if desired. Brown for 5-6 minutes while bacon is cooking, remove from pan and set aside.
  4. Begin to build bowls starting with perfect roasted sweet potatoes. Top with bacon, sausage, peppers, and mushrooms. Top with fried eggs at desired done-ness. Garnish with avocado and chopped green onion if desired.
